Overnight Oats with Zucchini and Nut Milk

Ingredients

  • 1/2 cup gluten free oats
  • 1 tbsp chia seeds
  • 1/2 cup frozen zucchini
  • 1 cup nut milk

Toppings

  • Delicata squash
  • Fig
  • Banana
  • Pumpkin seeds
  • Almond butter

Preparation

  1. Soak the ingredients in a container or jar overnight to allow them to soften.

  2. After soaking, cut the zucchini into smaller pieces if desired.

  3. In the morning, heat the mixture or eat it cold as preferred.

  4. Add the toppings before serving for extra flavor and texture.
