Quick Oat Cookies
Ingredients
- 1 cup quick oats (or thin rolled oats)
- 3 tbsp peanut butter (unsweetened)
- about 30g vegan dark chocolate
- 1 cup dates (if using medjool
- soak for 5 minutes in hot water and then drain)
Preparation
Preheat the oven to 180C/350F
Add the dates, oats and peanut butter to a bowl and combine by mashing with your hands (or do this in a food processor until combined)
Roll the dough into 4 equal balls, place them on an oven tray lined with parchment paper
Use your hands to make the balls flat and form into cookies. Crush the chocolate into smaller pieces and carefully press them into the cookies
Now bake the cookies for about 8-10 minutes until lightly browned
When the cookies are baked, let them rest and cool down before enjoying them
