No Bake Coconut Cookies
Ingredients
- 100g (1 cup) coconut
- 150g (3/4 cup packed) dates.
- 1 tbsp natural peanut butter
- pinch of salt
- 1/8 tsp vanilla paste
- 50g dark chocolate, melted
Preparation
Toast the coconut, either in a frying pan or in the oven at 175C (350F) for a couple of minutes until lightly brown and fraigrent. Be careful not to burn it!
Add all the ingredients, except for the chocolate, to a food processor and mix until a dough forms
Shape cookies using your fingers or a mini donut pan
Melt the chocolate and drizzle over the cookies and let set in the fridge for an hour
