No Bake Coconut Cookies

Ingredients

  • 100g (1 cup) coconut
  • 150g (3/4 cup packed) dates.
  • 1 tbsp natural peanut butter
  • pinch of salt
  • 1/8 tsp vanilla paste
  • 50g dark chocolate, melted

Preparation

  1. Toast the coconut, either in a frying pan or in the oven at 175C (350F) for a couple of minutes until lightly brown and fraigrent. Be careful not to burn it!

  2. Add all the ingredients, except for the chocolate, to a food processor and mix until a dough forms

  3. Shape cookies using your fingers or a mini donut pan

  4. Melt the chocolate and drizzle over the cookies and let set in the fridge for an hour
