Simple Stamped Butter Cookies

Ingredients

  • 1 cup butter at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 large egg
  • 3 cups flour

Preparation

  1. Place the rack in the middle of the oven and preheat to 180°C.

  2. Prepare shallow-edged trays by lining them with parchment paper.

  3. In the mixer bowl, place butter and sugar, attach the whisk attachment, and mix on medium speed for several minutes until the butter is light in color.

  4. Add vanilla extract, almond extract, and egg, then mix on medium speed until the egg is incorporated.

  5. Add flour and attach the paddle attachment, then mix on low speed until a soft dough forms.

  6. On a floured surface, place half the dough and roll it out to about 4 mm thick.

  7. Use a stamped cutter to impress the design, cut into circles with a cookie cutter, repeat with the remaining dough, and place cookies on trays with about 1 cm space between them.

  8. Bake for 8 to 10 minutes until the bottom is golden brown.
