Spooky Halloween Cheesecake with Edible Eyeballs

Ingredients

  • 40g Grape Nuts
  • 1 tablespoon erythritol gold or soft brown sugar
  • Moroccan almond extract
  • 1 tablespoon hot water
  • ASDA cherry morello cherry compote
  • 3 Laughing Cow extra light cheese triangles
  • Lindahl's kvarg white chocolate
  • Stevia drops

Eyeball components

  • Hotel Chocolat white chocolate ball
  • Cacao Barry dark chocolate callet
  • Dr. Oetker veggie gel
  • Food color gels

Preparation

  1. Blitz the Grape Nuts into a fine crumb

  2. Mix the crumb with sugar, almond extract, and hot water, then press into a lined chefs ring

  3. Mix the cheese triangles, kvarg, almond extract, stevia drops, and add to the ring

  4. Dip the white chocolate ball several times in veggie gel

  5. Tattoo the details with food color gels

  6. Add more compote for gore effect
