Three-Ingredient Vegan Peanut Butter Cookies
Ingredients
- 1 cup peanut butter (no added oil, no added sugar)
- 3/4 cup oat flour
- 1/4 cup maple syrup
Preparation
Preheat oven to 180°C (350°F). Line a cookie sheet with parchment paper and set aside.
In a medium-sized mixing bowl, add peanut butter and maple syrup.
Combine with a spatula until it forms a creamy paste.
Fold in the oat flour and stir until it forms a cookie dough ball.
Divide the cookie dough into 12 pieces.
Roll each piece into a ball between your hands.
Place each ball on the prepared cookie sheet and flatten with a fork, forming a cross shape.
Shape all cookies and leave space between them on the sheet.
Bake for 12-18 minutes or until the sides are golden brown.
Cool for 10 minutes on the cookie tray, then transfer to a cooling rack. They will become crunchier over time.
