Turkish Basma Kadayıf Dessert
Ingredients
- 1 kg fresh kadayıf
- 350 g butter
- 350 g walnuts
Syrup
- 7 cups granulated sugar
- 7 cups water
- 1 slice lemon
Preparation
First, prepare the syrup by putting sugar, water, and lemon in a pot and cooking on high heat for about 25-30 minutes until it reaches the desired consistency.
Loosen and fluff the kadayıf.
Mix the kadayıf with melted and cooled butter.
Grease a standard baking tray with butter and spread half of the kadayıf mixture, then press it down firmly with a pot.
Spread walnuts or pistachios over it, then spread the remaining kadayıf and press down again with a pot.
Bake in a preheated oven at 180 degrees Celsius with fan setting until golden brown, approximately 50 minutes.
While the dessert is hot, pour the cold syrup over it and let it rest for about 1 hour.
Tips
Kadayıf should be fresh and not dry.
The amount of butter is important for taste and crispiness.
Pressing and compacting the kadayıf in the tray is crucial.
Baking should be slow and until sufficiently browned.
For a great presentation, invert the kadayıf onto another tray after baking.
The syrup should be lightly thick so it doesn't make the kadayıf soggy.
