Vegan Flourless Pumpkin Muffins
Ingredients
- 1 can of chickpeas
- 1/3 cup of rolled oats
- 1/3 cup of pumpkin purée
- 1/3 cup of syrup (maple or date)
- 1/4 cup of almond butter
- 1/4 tsp of salt
- 3/4 tsp of baking powder
- 1 tbsp of vanilla extract
- Cinnamon
- 1/8 tsp of baking soda
- Vegan chocolate chips
Preparation
Optionally, remove the skin from the chickpeas.
Add all ingredients except chocolate chips to a food processor and pulse until fully blended together.
Mix in vegan chocolate chips to the batter and on top before baking.
Bake for 13 minutes at 350°F in a muffin tin.
