Vegan Flourless Pumpkin Muffins

Ingredients

  • 1 can of chickpeas
  • 1/3 cup of rolled oats
  • 1/3 cup of pumpkin purée
  • 1/3 cup of syrup (maple or date)
  • 1/4 cup of almond butter
  • 1/4 tsp of salt
  • 3/4 tsp of baking powder
  • 1 tbsp of vanilla extract
  • Cinnamon
  • 1/8 tsp of baking soda
  • Vegan chocolate chips

Preparation

  1. Optionally, remove the skin from the chickpeas.

  2. Add all ingredients except chocolate chips to a food processor and pulse until fully blended together.

  3. Mix in vegan chocolate chips to the batter and on top before baking.

  4. Bake for 13 minutes at 350°F in a muffin tin.
