Vegan Skillet Chocolate Chip Cookie

Ingredients

  • 3/4 cup refined organic coconut oil (solid)
  • 1 cup packed organic brown sugar
  • 1/2 cup organic granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 tablespoon vanilla extract
  • 1/3 cup water and 2 tablespoons ground golden flax-seed
  • 2 1/4 cups organic all purpose flour
  • 1 1/2 to 2 cups vegan chocolate chips
  • Optional: flaked sea salt for topping

Preparation

  1. Preheat oven to 350 degrees.

  2. Cream coconut oil, sugars, baking soda, baking powder, vanilla, and flax mixture until smooth and fluffy, about 2 minutes.

  3. Add flour and combine until well mixed.

  4. Add chocolate chips and stir until incorporated.

  5. Transfer cookie dough to a 12-inch cast iron skillet and press the dough with your hands to even and spread it out.

  6. Sprinkle with flaked sea salt if desired.

  7. Bake for 20-25 minutes depending on your desired level of gooey center.

  8. Top with vegan ice cream and enjoy.
