White Bean Cookie Dough Ice Cream Bars

Ingredients

  • 50g dates
  • 1 tbsp nut butter (almond used)
  • pinch of salt
  • 200g white beans (drained and washed)
  • 50g flour (almond flour used)
  • flavedrops (cookie dough flavor, optional, or use more dates)
  • 30g chocolate chips (preferably sugar free)
  • bought vanilla ice cream (low sugar)
  • dark chocolate for melting

Preparation

  1. Blend the white beans, salt, dates, and nut butter in a food processor or good mixer.

  2. Add in the flour and flavedrops (or more dates if not using) and mix again. You can use hands or a spoon.

  3. Fold in the chocolate chips.

  4. Press the cookie dough into a square form to make bars.

  5. Spread the low-sugar vanilla ice cream on top of the dough.

  6. Drizzle melted dark chocolate over everything.

  7. Enjoy as is or as assembled bars.
