White Bean Cookie Dough Ice Cream Bars
Ingredients
- 50g dates
- 1 tbsp nut butter (almond used)
- pinch of salt
- 200g white beans (drained and washed)
- 50g flour (almond flour used)
- flavedrops (cookie dough flavor, optional, or use more dates)
- 30g chocolate chips (preferably sugar free)
- bought vanilla ice cream (low sugar)
- dark chocolate for melting
Preparation
Blend the white beans, salt, dates, and nut butter in a food processor or good mixer.
Add in the flour and flavedrops (or more dates if not using) and mix again. You can use hands or a spoon.
Fold in the chocolate chips.
Press the cookie dough into a square form to make bars.
Spread the low-sugar vanilla ice cream on top of the dough.
Drizzle melted dark chocolate over everything.
Enjoy as is or as assembled bars.
