Apple Pie Baked Oats and Custard

Ingredients

  • 1 apple
  • 40g oats (gluten free oats if coeliac)
  • 125g / 1 small pot of low fat vanilla yoghurt or custard (save half for the topping)
  • 1 egg white (or egg replacer/chia/flax egg if vegan)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tbsp lemon juice

Preparation

  1. Peel, core and chop an apple and microwave it until soft. Then mash it into a puree

  2. Whisk the egg white/vegan egg in a bowl until fluffy

  3. Put all of the other ingredients in a separate bowl (leave half of the yoghurt/custard for serving later, use a non dairy one if vegan)

  4. Mix until smooth then stir in the 'egg' mixture

  5. Line a small oven-proof dish with greaseproof paper, pour the mixture in and bake for 35 minutes on 180 degrees

  6. Top with the remaining yoghurt/custard
