Maple and Gingerbread Baked Oats

Ingredients

  • 50g oats
  • 1 small very overripe banana
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1 tbsp maple syrup
  • 150ml boiling water

Spiced yoghurt

  • pinch of ground ginger
  • pinch of ground cinnamon
  • few tablespoons of vanilla yoghurt

Preparation

  1. Put oats into a bowl and pour over hot water. Leave to soak for 5 minutes.

  2. Meanwhile, mash the banana and add it to the oats.

  3. Add everything else into the bowl and mix until smooth.

  4. Line a baking tin with greaseproof paper.

  5. Bake in the oven at 180 degrees Celsius or 350 degrees Fahrenheit or gas mark 4 for 25 minutes.

Yoghurt mixing

  1. Mix together a pinch of ground ginger, a pinch of ground cinnamon, and a few tablespoons of vanilla yoghurt.
