Easy Healthy Vegan Pumpkin Pancakes Breakfast

Ingredients

  • 1 cup oats
  • 1/2 ripe banana
  • 1/2 cup almond milk
  • 1/4 cup pumpkin purée
  • 1 tbs flaxseed
  • 1.5 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg

Preparation

  1. Blend all the ingredients together in a blender.

  2. Cook the mixture on a skillet for about 2 minutes on each side or until golden brown.

  3. Top with your favorite toppings such as coconut yogurt, sliced bananas, strawberries, cinnamon sliced pears, sunflower seeds, coconut shreds, and peanut butter.

  4. For cinnamon sliced pears, toss diced pears in a pan and season with cinnamon.
