Roasted Beets and Apple Salad

Ingredients

  • 3 cups of beets( use gloves to peel and cubes in small pieces)
  • 1 Granny Smith apple
  • 1 tsp of dry thyme
  • 1 tsp of cumin
  • olive oil
  • 1 lemon juice
  • salt and 3 tbsp red wine vinegar and for garnish use feta cheese

Preparation

  1. Simply for the beets after cutting in cubes add salt and drizzle 2 tbsp of olive oil and 1 tsp of cumin, and roast in sheets pan for 30 minutes until slightly caramelized( use wooden spoon to turn around 15 minutes in the process)

  2. Cool off file 15 minutes

  3. In a large mixing bowl combine apples and beets , dry thyme , red wine vinegar and lemon juice, season with soy again and mix week until all ingredients are well dressed

  4. Sprinkle with feta cheese
