Sticky Bun Banana Bread

Ingredients

  • 1/4 cup unsweetened almond milk
  • 1/2 teaspoon apple cider vinegar
  • 4 spotted ripe bananas
  • 1/3 cup neutral oil
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cups spelt flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch sea salt
  • 1/3 cup chopped raw pecans

Sticky topping

  • 1/3 cup chopped raw pecans
  • 3 Tbsp coconut oil or manna
  • 3 Tbsp cinnamon sugar

Preparation

  1. Preheat oven to 375 degrees F.

  2. Oil loaf pan or line with parchment paper.

  3. Place almond milk in bowl with vinegar. Set aside for a moment to curdle.

  4. Peel and mash 3 of your bananas in a large bowl.

  5. Add oil, sugar, vanilla and milk mixture and stir.

  6. Add flour, baking powder, baking soda, and salt, and mix until just combined.

  7. Pour into lined loaf pan.

  8. Slice 4th banana lengthwise, place on top of banana bread batter and sprinkle with few extra blackberries.

  9. Bake for 45-60 minutes until brown on top.

  10. Cool, slice and enjoy.

Sticky topping

  1. Mix the sticky topping ingredients together and spread over the banana bread before or after baking as desired
