Sticky Bun Banana Bread
Ingredients
- 1/4 cup unsweetened almond milk
- 1/2 teaspoon apple cider vinegar
- 3 spotted ripe bananas
- 1/3 cup canola or coconut oil
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1 3/4 cups spelt flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch sea salt
- 1/3 cup chopped raw pecans
Preparation
Preheat oven to 375 degrees F
Oil loaf pan or line with parchment paper
Place almond milk in bowl with vinegar. Set aside for a moment to curdle. Peel and mash 3 of your bananas in a large bowl. Add oil, sugar, vanilla and milk mixture and stir. Add flour, baking powder, baking soda, and salt, and mix until just combined. Pour into lined loaf pan
For the sticky topping: 1/3 cup chopped raw pecans, 3 tbsp coconut oil or manna, 3 tbsp cinnamon sugar
Mix sticky topping ingredients together in small bowl in press gently in to the top of your batter
Bake for 45-60 minutes until brown on top
Cool, slice and enjoy
