Vegan Lemon Cream Dessert

Ingredients

  • 4 organic lemons
  • 250 ml oat cream
  • 150 g vegan cream cheese
  • 100 g sugar
  • 50 ml lemon juice

Optional

  • 1 tsp agar agar

Preparation

  1. Wash the lemons, halve three of them and remove the flesh, then press the juice out or strain it and set aside

  2. Grate the zest from the fourth lemon and add it to a saucepan with the oat cream, vegan cream cheese, and sugar

  3. Add agar agar if desired, as it helps the cream set faster

  4. Heat the mixture and gently warm for about 10 minutes, stirring regularly

  5. Strain through a sieve, add 50 ml of the lemon juice, and let it cool slightly

  6. Fill the halved lemon shells with the mixture and refrigerate for at least 4 hours

Tips

  1. Garnish with mint when serving
