Vegan Pain Perdu Waffles

Ingredients

  • 1/2 cup soft mori-nu tofu
  • 1 cup all-purpose flour
  • 1 1/4 cup ripple foods milk
  • 3 tablespoons avocado oil
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • Bread

Preparation

  1. Puree all ingredients in a blender.

  2. Pour the mixture into a bowl or 8x8 pan.

  3. Soak the bread in the liquid.

  4. Place on an oiled griddle, frying pan, or waffle maker.

  5. Cook each side for 3-4 minutes until browned.

  6. Serve with powdered sugar and fresh blueberries and strawberries.

Tips

  1. Using stale bread is best and an Italian style bread is preferable. They don't get as soggy, but really any bread will do.
