Vegan Gluten-Free French Toast Sticks

Ingredients

  • 4 slices of gluten free bread
  • 1 cup dairy-free milk
  • 1 Tbsp ground flax seed
  • 1 medium banana
  • 1 tsp cinnamon
  • 1 tsp vanilla (optional)
  • 1 Tbsp coconut oil

Toppings

  • 1/3 cup maple syrup
  • 1/4 cup walnuts

Preparation

  1. Mash the banana into a paste.

  2. Cut the bread slices into sticks and set aside.

  3. In a large bowl, combine the mashed banana, dairy-free milk, cinnamon, vanilla, and ground flax seed; whisk until mixed.

  4. Refrigerate the mixture for 10 minutes to thicken, then whisk again.

  5. Dip the bread sticks into the mixture, ensuring all sides are covered, and repeat for all sticks.

  6. Heat a large pan over medium heat and add the coconut oil.

  7. Add 3-4 coated sticks to the pan and fry until golden brown on both sides, about 2 minutes per side.

  8. Serve with walnuts, bananas, and maple syrup.
