Easy Mini Vegetable Lasagna
Ingredients
- 2 pasta sheets
- 2 cups baby spinach
- 3 tablespoons cheese (ricotta or similar)
- 2 eggs
- Tomato sauce
- Salt, nutmeg, and pepper
Preparation
Beat the ingredients well to make the filling.
Soak the pasta sheets if necessary.
In a small rectangular dish, add a layer of tomato sauce and alternate layers of pasta and filling.
Cover the dish with aluminum foil and bake in the oven at 200°C for 15 minutes.
Uncover and bake until the top is golden brown.
Tips
Some pasta sheets may not require soaking.
Quantities are approximate and can be adjusted.
