Easy Mini Vegetable Lasagna

Ingredients

  • 2 pasta sheets
  • 2 cups baby spinach
  • 3 tablespoons cheese (ricotta or similar)
  • 2 eggs
  • Tomato sauce
  • Salt, nutmeg, and pepper

Preparation

  1. Beat the ingredients well to make the filling.

  2. Soak the pasta sheets if necessary.

  3. In a small rectangular dish, add a layer of tomato sauce and alternate layers of pasta and filling.

  4. Cover the dish with aluminum foil and bake in the oven at 200°C for 15 minutes.

  5. Uncover and bake until the top is golden brown.

Tips

  1. Some pasta sheets may not require soaking.

  2. Quantities are approximate and can be adjusted.
