Bulgar Wheat Vegetable Bowl with Peanut Sauce

Ingredients

  • 2/3 cup bulgar wheat
  • 1 cup boiling water
  • chickpeas
  • broccoli
  • kabocha squash
  • mushrooms
  • onions
  • sesame seeds
  • red chili flakes
  • greens

Peanut sauce

  • 1 tbsp peanut butter
  • 1 tsp soy sauce
  • 1 tsp maple syrup
  • 1/4 tsp ground ginger
  • 1/4 tsp garlic powder
  • 1 tbsp water

Preparation

  1. Add 2/3 cup bulgar wheat to a medium-sized glass Tupperware container.

  2. Add 1 cup of boiling water and allow to sit for about 5 minutes or until all liquid is absorbed.

  3. Combine the peanut sauce by mixing 1 tbsp peanut butter, 1 tsp soy sauce, 1 tsp maple syrup, 1/4 tsp ground ginger, 1/4 tsp garlic powder, and 1 tbsp water to thin.

  4. Roast the broccoli and sauté the kabocha squash, mushrooms, and onions as desired.

  5. Assemble the dish by placing the cooked bulgar wheat and chickpeas over greens, add the roasted and sautéed vegetables, top with the peanut sauce, and sprinkle with sesame seeds and red chili flakes.

  1. Bulgar wheat is an excellent source of fiber, plant-based protein, iron, magnesium, and manganese.
