Easy-To-Make Curried Cumin Potatoes

Ingredients

  • 2 lbs of yellow potatoes
  • 3 tbsp of grape seed or avocado oil
  • 1 small red onion
  • 1/2 cup green frozen peas
  • 2 tsp of curry powder
  • 1 tsp turmeric powder
  • 1 tsp of cumin seeds
  • 1 tsp of mustard seeds
  • 1 tsp of chili powder
  • salt to taste
  • handful of cherry tomatoes and lime for garnish.
  • handful of cilantro or fresh fenugreek leaves.

Preparation

  1. Place whole potatoes into a saucepan with water to cover

  2. Bring to a boil, and cook until just tender

  3. Drain, and cut potatoes into quarters or cubes

  4. Set aside to keep warm

  5. Heat oil in a large saute pan over medium-high heat

  6. Saute the cumin, turmeric, mustard seeds and curry powder for 1 minute until aromatic

  7. Add chopped red onion

  8. Sauté for 5 min until onions are soft

  9. Add the potatoes, and saute until toasted

  10. Add the frozen peas, chili powder, salt and toss potatoes until all combined

  11. Garnish with sliced tomatoes, lime wedges and herbs and enjoy with fresh naan or with the side of cooked rice
