Healthy Chicken and Sweet Potato Pie

Ingredients

  • 300g shredded chicken
  • 200g cooked and mashed sweet potato
  • 2 egg yolks or 1 egg
  • 2 tablespoons whole wheat flour (or another flour of your choice)
  • 1/2 tablespoon baking powder
  • Water
  • Salt and seasonings to taste
  • Light cream cheese or light cream cheese substitute
  • Grated cheese of your preference for grating
  • Oregano to taste

Preparation

  1. Mix the sweet potato with the egg yolks and flour.

  2. Add a little water so the dough isn't too thick.

  3. Now add the baking powder, salt, and seasonings.

Assembly

  1. In a greased baking dish, place half of the dough, then the chicken, some spoons of light cream cheese, and the rest of the dough.

  2. Cover with grated cheese and a bit of oregano.

  3. Bake in the oven at 200°C for 15 to 20 minutes, or until a toothpick inserted comes out clean.

  4. If your oven has a grill, turn on the grill for 5 minutes just to brown.
