Healthy Vegan Bowl for Workout Recovery
Ingredients
- Spinach
- Sweet potato
- Couscous
- Veggie broth
- Green beans
- Purple brussel sprouts
- 1/2 avocado
Preparation
Bake sweet potato in the oven at 410°F for about 40 minutes, depending on size.
Prepare couscous by boiling veggie broth and simmering over medium heat for 12 minutes.
Roast green beans in the oven at 400°F for 35 minutes.
Roast purple brussel sprouts in the oven at 400°F for 35 minutes or until done.
Assemble the bowl with spinach as the base and add the prepared sweet potato, couscous, green beans, brussel sprouts, and half an avocado.
