Healthy Vegan Bowl for Workout Recovery

Ingredients

  • Spinach
  • Sweet potato
  • Couscous
  • Veggie broth
  • Green beans
  • Purple brussel sprouts
  • 1/2 avocado

Preparation

  1. Bake sweet potato in the oven at 410°F for about 40 minutes, depending on size.

  2. Prepare couscous by boiling veggie broth and simmering over medium heat for 12 minutes.

  3. Roast green beans in the oven at 400°F for 35 minutes.

  4. Roast purple brussel sprouts in the oven at 400°F for 35 minutes or until done.

  5. Assemble the bowl with spinach as the base and add the prepared sweet potato, couscous, green beans, brussel sprouts, and half an avocado.
