Loaded Mac and Cheese

Ingredients

  • Vegetarian southern fried chicken tenders
  • Vegetarian bacon lardons
  • Mixed macaroni pasta (curly, straight, ditali)
  • 250ml boiling water
  • 6 Laughing Cow lightest cheese triangles
  • 20g smoked cheddar
  • Onion salt
  • Chicken style stock powder
  • Garlic puree
  • 20g grated mozzarella

Toppings

  • Kansas City style BBQ sauce
  • Chilli flakes
  • Chives

Preparation

  1. Cook the vegetarian chicken tenders in an air fryer until done and cut them up.

  2. Pan fry the bacon lardons until crispy.

  3. Cook the mixed macaroni in 250ml boiling water until tender.

  4. Stir in the onion salt, chicken style stock powder, and garlic puree to taste.

  5. Add the cheese triangles and stir until melted.

  6. Mix in the smoked cheddar chunks.

  7. Stir in the grated mozzarella until stringy.

  8. Place the macaroni mixture in a bowl and top with the cooked tenders and lardons.

  9. Drizzle with Kansas City style BBQ sauce and sprinkle with chilli flakes and chives.

Notes

  1. The remaining mac 'n' cheese can be used as a topping for a burger.
