Oven-Baked Lemon Garlic Chicken

Ingredients

  • 6-7 chicken thighs
  • 500g baby potatoes or 3 large potatoes, cubed
  • 500g asparagus (optional)
  • salt, average 1/2 teaspoon
  • black pepper, 1/2 teaspoon
  • red pepper flakes, average 1/2 teaspoon
  • chicken seasoning, average 1/2 teaspoon
  • thyme, average 1/2 teaspoon
  • curry powder, average 1/2 teaspoon
  • 1/4 cup liquid oil

Sauce

  • 3 garlic cloves, grated
  • juice of 1.5 lemons
  • 1/2 cup olive oil
  • 1/2 cup water

Preparation

  1. Preheat the oven to 200°C

  2. Combine all the ingredients in a baking dish, mix well, and cover with a wet parchment paper

  3. Bake covered for 45 minutes

  4. Prepare the sauce by grating garlic and mixing it with lemon juice, olive oil, and water

  5. Remove the dish from the oven, pour the sauce over the chicken and vegetables, and bake uncovered at 200°C for another 30 minutes or until browned

Tips

  1. You can substitute asparagus with mushrooms, Brussels sprouts, or other preferred vegetables

  2. Optionally add a teaspoon of honey to the sauce for extra flavor

  3. Adjust the baking time and browning based on your preference for doneness
