Peanut Butter and Maple Syrup Caramalised Cauliflower Tortillas with Brussel Sprout Slaw, Adzuki Bean Hummus, Coriander and Toasted Almond Feta Crumble
Ingredients
- CARAMALISED CAULIFLOWER
- About 2 cups cauliflower florets (small pieces)
- 2 Tbs sesame oil
- Heaped Tbs peanut butter
- 1 Tbs maple syrup
- Chilli flakes to taste
- Salt to taste
- ADZUKI PEANUT BUTTER HUMMUS
- 1 cup cooked adzuki beans
- 2 Tbs tahini
- 1 Tbs peanut butter
- 1 Tbs toasted dukkah
- 1 Tbs olive oil
- 1 garlic clove
- 1 tsp sriracha sauce
- Salt and pepper to taste
- Additional water to desired consistency
Preparation
CARAMALISED CAULIFLOWER
Combine the ingredients and toss in the cauliflower florets to coat. Try not to lick the bowl (the sauce is delicious). Roast at 200 deg C until golden and crisp (about 30 mins in oven and 15 in air fryer)

Place in a food processor and blend until smooth
