Single Serve Breakfast Chocolate Cupcakes
Ingredients
- 2/3 cup oats, blended
- 2/3 large ripe banana
- squeeze of lemon juice
- 1 tbsp flax
- 1-2 tbsp cocoa powder
- dash of coconut milk (or other)
- pinch of salt
- 1/2 tsp baking powder
- chocolate peanut butter
- raspberry jam
- strawberries, raspberries, blueberries
- blueberry coconut yogurt
Preparation
Preheat oven fan 180°C
First blend the oats
Then blend in the other ingredients, until smooth
Blend in more milk if necessary to make a cake batter consistency
Pour into silicone cupcake cases and bake for 15 mins
