Single Serve Breakfast Chocolate Cupcakes

Ingredients

  • 2/3 cup oats, blended
  • 2/3 large ripe banana
  • squeeze of lemon juice
  • 1 tbsp flax
  • 1-2 tbsp cocoa powder
  • dash of coconut milk (or other)
  • pinch of salt
  • 1/2 tsp baking powder
  • chocolate peanut butter
  • raspberry jam
  • strawberries, raspberries, blueberries
  • blueberry coconut yogurt

Preparation

  1. Preheat oven fan 180°C

  2. First blend the oats

  3. Then blend in the other ingredients, until smooth

  4. Blend in more milk if necessary to make a cake batter consistency

  5. Pour into silicone cupcake cases and bake for 15 mins
