Sweet Spinach Muffins

Ingredients

  • 2 1/2 cups spelt or plain flour
  • 1 1/2 tsp cinnamon
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup almond milk
  • 1/2 to 3/4 cup maple syrup
  • 1 large ripe banana
  • 1 teaspoon vanilla
  • 1 large egg
  • 1/2 cup avocado oil
  • 3 cups spinach (150g)

Preparation

  1. Preheat oven to 180C and line a muffin tray with muffin cases

  2. Sieve the flour, cinnamon, salt and baking powder into a large bowl

  3. Put the spinach and milk into a blender and blitz till smooth

  4. Add the rest of the ingredients and blend till well mixed

  5. Pour the wet into the dry ingredients and using a spatula, mix till combined

  6. Pour into your lined muffin tray and bake for 25mins

  7. Transfer to a wire rack to cool completely. Enjoy
