Sweet Spinach Muffins
Ingredients
- 2 1/2 cups spelt or plain flour
- 1 1/2 tsp cinnamon
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup almond milk
- 1/2 to 3/4 cup maple syrup
- 1 large ripe banana
- 1 teaspoon vanilla
- 1 large egg
- 1/2 cup avocado oil
- 3 cups spinach (150g)
Preparation
Preheat oven to 180C and line a muffin tray with muffin cases
Sieve the flour, cinnamon, salt and baking powder into a large bowl
Put the spinach and milk into a blender and blitz till smooth
Add the rest of the ingredients and blend till well mixed
Pour the wet into the dry ingredients and using a spatula, mix till combined
Pour into your lined muffin tray and bake for 25mins
Transfer to a wire rack to cool completely. Enjoy
