Almond Butter and Raspberry Overnight Oats

Ingredients

  • 3 cups plant mylk
  • 1 tbsp chia seeds
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • 4 dates, pitted
  • 1 cup oats

Toppings

  • 1.5 cups raspberries
  • 4 tbsp almond butter

Preparation

  1. Add plant mylk, chia seeds, almond butter, vanilla extract, and dates to a food processor or blender and blend on high until thoroughly combined.

  2. Pour the mixture into a container and stir in the oats.

  3. Set aside in the fridge overnight to thicken.

  4. In the morning, mash raspberries to a pulp with a fork.

  5. Layer the jars with mashed raspberries, overnight oats, and almond butter.

Tips

  1. If you don’t have a food processor, mix the ingredients well in a bowl with a fork.

  2. This recipe makes 4 servings.
