Vegan Lemon Blueberry Overnight Oats
Ingredients
Overnight oats
- 1 cup porridge oats
- 1 cup milk of choice
- 3 heaped tbsp vegan greek yoghurt or coconut yoghurt
- Small pinch salt
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 4 tbsp fresh lemon juice or juice of 2 small lemons
- 2-3 tsp maple syrup or to taste
Blueberry chia jam
- 300g blueberries
- Squeeze of lemon
- 2 tbsp chia seeds
- 1-2 tbsp maple syrup to taste
Preparation
Stir together all overnight oats ingredients in a big bowl, taste and adjust maple syrup or lemon to taste, then cover and leave to set for 2 hours or overnight.
For the chia jam, add blueberries, lemon juice, and maple syrup to a pan over low heat.
Mash the blueberries with a masher or fork and simmer for 5-10 minutes until juices release and the mixture turns a rich purple color.
Remove from heat, stir in chia seeds, and let it thicken into a jam texture.
Layer the overnight oats with the blueberry chia jam and enjoy.
Tips
The blueberry chia jam can be stored in a jar in the fridge for up to a week.
Adjust sweetness and acidity to personal preference during preparation.
