Baked Carrot Cake Oats

Ingredients

  • 2c oats
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/4 tsp pink salt
  • 1.5c shredded carrots
  • 2c @ripplefoods milk (unsweetened, original)
  • 1/3c maple syrup
  • 1 tsp vanilla extract
  • 1/4c golden raisins
  • 4 tbsp almond butter (unsalted)
  • 1/4c chopped walnuts

Preparation

  1. Preheat oven to 375°F and lightly grease a casserole dish.

  2. In a medium bowl mix together oats, baking powder, ginger, cinnamon, and salt.

  3. In a large bowl whisk together carrots, milk, maple syrup, and vanilla.

  4. Add the dry mixture to wet mixture and stir until combined.

  5. Pour mixture into prepared casserole dish and smooth out with a spoon.

  6. Chop walnuts (optional: toast before adding in).

  7. Stir in almond butter, sprinkle in walnuts and raisins, and then lightly press mixture down again.

  8. Bake uncovered for 35 minutes or until lightly golden along the edges. Then cover and bake for 10 more minutes.

  9. Let cool for 10 minutes before serving.
