Easy Vegan Pumpkin Spice Pancakes

Ingredients

  • 1/4 cup paleo pancake and waffle mix
  • 1/4 cup buckwheat flour
  • 1 scoop vegan pumpkin spice latte protein powder
  • 1 vegan egg
  • 1/4 cup pumpkin purée
  • 1/2 teaspoon baking powder
  • Water or plant milk to desired consistency

Toppings

  • Raw creamy almond butter
  • Cookie dough bar
  • Shredded coconut flakes

Preparation

  1. In a large bowl, combine all dry ingredients: paleo pancake and waffle mix, buckwheat flour, vegan pumpkin spice latte protein powder, and baking powder.

  2. In another bowl, mix the wet ingredients: vegan egg, pumpkin purée, and add water or plant milk to achieve the desired batter consistency.

  3. Gradually add the wet mixture to the dry ingredients and stir until just combined, avoiding overmixing.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or cooking spray.

  5. Pour batter onto the skillet in 1/4 cup portions and cook until bubbles form on the surface, about 2-3 minutes.

  6. Flip the pancake and cook for another 1-2 minutes until golden brown.

  7. Repeat with the remaining batter.

  8. Serve the pancakes topped with raw creamy almond butter, pieces of cookie dough bar, and shredded coconut flakes.
