Creamy Mushroom Alfredo Pasta in 12 Minutes

Ingredients

  • 160g-200g pasta
  • 1/2 packet of silken tofu
  • 1/3 cup veggie stock
  • 1/2 tsp garlic powder/granules
  • 2 tbs nutritional yeast
  • pinch of nutmeg
  • pinch of salt and pepper
  • 150g mushrooms any type will do (i used baby chestnut)

Preparation

  1. Get your pasta on to boil and set the 12 minute timer.

  2. Place all sauce ingredients except mushrooms in a blender and blend until creamy.

  3. Fry mushrooms in a little spray of olive oil until golden (about 5 minutes).

  4. Turn down the heat, add the sauce from the blender, and heat for the remaining minutes.

  5. Once pasta is finished, drain and coat with the sauce.

  6. If the sauce has reduced too much, add a splash of the pasta cooking liquid.
