Vegan Baked Cream Cheese Pasta

Ingredients

  • 200g tomatoes
  • 70g vegan cream cheese
  • 1 tsp dried basil and parsley
  • Salt and pepper
  • Pasta for 2

Garnish

  • Fresh basil
  • Chili flakes

Preparation

  1. Preheat oven to 400°F (200°C).

  2. In a baking dish, combine tomatoes, vegan cream cheese, dried basil and parsley, salt, and pepper.

  3. Bake for 20-25 minutes or until tomatoes are burst and cheese is soft.

  4. Cook pasta according to package instructions.

  5. Mix the baked mixture with the cooked pasta.

  6. Garnish with fresh basil and a sprinkle of chili flakes.
