Beet Bliss Balls for Energy and Recovery

Ingredients

  • 6 dates
  • 1/4 cup raw pumpkin seeds
  • 2 tbsp chia seeds
  • 1/4 cup flax meal
  • 1/4 cup coconut butter
  • 2 tbsp raw beet powder
  • 2 tbsp cacao nibs
  • 1/4 cup dark vegan chocolate
  • optional: adaptogen blend

Preparation

  1. Soak dates in warm water for 15 minutes to an hour.

  2. Blend all ingredients except cacao nibs in a food processor until dough forms.

  3. If the mixture is too powdery, add very small increments of water (oil may separate, but that's okay).

  4. Transfer the mixture to a bowl and add cacao nibs, then mix well.

  5. Form the mixture into small balls.

  6. Refrigerate the balls for about 20 minutes to harden.

  7. Meanwhile, melt the dark vegan chocolate over low heat on the stove, stirring constantly.

  8. Drizzle the melted chocolate over the balls using a spoon.

  9. Store the balls in the fridge and enjoy.
