Gingersnap Pillow Cookies

Ingredients

  • 2 cups almond flour
  • 2 overly ripe bananas
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp gingersnap spice
  • lots of cinnamon
  • wet
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 2.5 tbsp blackstrap molasses

Preparation

  1. Set oven 350F - line baking sheet with parchment paper

  2. In a bowl mash bananas and add all other wet ingredients

  3. In separate bowl mix together dry ingredients

  4. Combine and scoop onto pan

  5. Bake for 15ish minutes

  6. I topped mine with coconut oil mixed with confectioners sugar another good topping could be coconut yogurt
