Gingersnap Pillow Cookies
Ingredients
- 2 cups almond flour
- 2 overly ripe bananas
- 1 tsp baking powder
- 1 tsp baking soda
- 3 tsp gingersnap spice
- lots of cinnamon
- wet
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 2 tbsp melted coconut oil
- 2.5 tbsp blackstrap molasses
Preparation
Set oven 350F - line baking sheet with parchment paper
In a bowl mash bananas and add all other wet ingredients
In separate bowl mix together dry ingredients
Combine and scoop onto pan
Bake for 15ish minutes
I topped mine with coconut oil mixed with confectioners sugar another good topping could be coconut yogurt
