Peanut Butter and Jelly Waffles

Ingredients

  • 1/2 cup oat flour
  • 1/4-1/2 cup almond milk
  • 1/2 banana
  • 1 flax egg
  • 1/4 tsp baking powder
  • Dollop of peanut butter
  • Cinnamon
  • Any mix-ins desired

Toppings

  • Bananas
  • Blueberries
  • Peanut butter
  • Cherry chia jam

Preparation

  1. Prepare the flax egg by mixing ground flaxseed with water and letting it sit for 5 minutes to gel

  2. Mash the 1/2 banana in a bowl

  3. In a large bowl, combine oat flour, baking powder, cinnamon, and any mix-ins

  4. Add the mashed banana, flax egg, peanut butter, and almond milk to the dry ingredients, mixing until combined. Adjust almond milk for desired consistency

  5. Heat a waffle iron according to manufacturer's instructions

  6. Pour batter onto the waffle iron and cook until golden and crisp

  7. Top the waffles with sliced bananas, blueberries, peanut butter, and cherry chia jam.
