Haskapa Berry Overnight Oats

Ingredients

  • 100g oats
  • 250ml coconut milk drink
  • 1/2 tsp cinnamon
  • 1 tsp vanilla essence or powder
  • 1 tbsp maple syrup (optional)
  • 2 tsp Haskapa berry powder
  • 2 tbsp coconut yogurt
  • 20g coconut flakes
  • Extra milk to loosen oats (if needed)

Preparation

  1. Add the oats, milk, spices, and maple syrup to a tub, mix to combine, cover, and place in the fridge overnight.

  2. Toast the coconut flakes in a saucepan over medium heat until lightly browned, then set aside.

  3. In the morning, stir the berry powder into the oats, top with toasted coconut flakes, coconut yogurt, and add extra milk if needed.
