Indonesian Sweet Rice Pudding

Ingredients

  • 50 grams rice flour
  • 500 ml coconut milk
  • 1/4 teaspoon salt
  • 1 pandan leaf

Palm sugar syrup

  • 150 grams palm sugar
  • 150 ml water
  • 1 teaspoon granulated sugar
  • a pinch of salt
  • 1 pandan leaf

Preparation

  1. In a pot, combine rice flour, coconut milk, salt, and pandan leaf. Stir well to avoid lumps.

  2. Cook on low heat, stirring continuously until the porridge thickens and does not burn.

  3. For the syrup, boil palm sugar, water, granulated sugar, salt, and pandan leaf until the sugar dissolves.

  4. Strain the syrup.

  5. Serve the rice pudding with the palm sugar syrup.
