Glutinous Rice Cake with Coconut Filling
Ingredients
- 1 cup palm sugar
- 3 tablespoons white sugar
- 1/2 cup water (cook, strain, and cool)
- 3 cups glutinous rice flour
- 1/2 cup coconut milk
- A pinch of salt (for dough)
Filling
- Grated coconut
- A pinch of salt
Preparation
Cook the sugar mixture by combining palm sugar, white sugar, and water, then strain and cool it
In a bowl, mix glutinous rice flour, coconut milk, and a pinch of salt for the dough
Add the cooled sugar mixture to the dough and stir until well combined
Prepare the filling by mixing grated coconut with a pinch of salt
Wilt banana leaves by heating them briefly and oil them to prevent sticking
Place a portion of dough on the oiled banana leaf, flatten it, add the coconut filling, and wrap securely
Steam the wrapped parcels until the cake is cooked through and firm

Oil the banana leaves before adding the dough to make wrapping easier and prevent sticking
