Colorful Steamed Cassava Cenil

Ingredients

Cenil

  • 500 g cassava, grated or blended
  • 150 g tapioca flour
  • As needed food coloring in red, yellow, and green
  • As needed salt

Sauce

  • 2 glasses water
  • 2.5 blocks palm sugar
  • A pinch of salt

Garnish

  • Steamed grated coconut with a little salt

Preparation

  1. Blend cassava until smooth and pour into a bowl. Add tapioca flour and salt, then mix until well combined and doughy.

  2. Divide the dough into three parts and add red, yellow, and green food coloring to each. Steam all three until cooked, about 10 minutes. Use a skewer test to ensure they are done.

  3. Let cool, cut into pieces as desired, then roll in the steamed coconut.

  4. Chop palm sugar into small pieces and put in a pot. Pour in 2 glasses of water and add a pinch of salt. Cook until boiling and sugar dissolves completely.

  5. Serve the cenil with the sugar sauce.
