Carrot Cake with Chocolate Pudding Layer

Ingredients

Pudding

  • 1 cup sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 3 eggs
  • 5 tablespoons cocoa powder (or chocolate drink mix)

Carrot cake

  • 2 eggs
  • 1 carrot
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder

Preparation

  1. Caramelize a pudding mold with sugar

  2. Blend all pudding ingredients in a blender and pour into the caramelized mold

  3. Blend carrot, eggs, and oil in a blender

  4. Transfer to a bowl and add flour, baking powder, and sugar; mix well

  5. Pour the carrot cake batter over the pudding mixture

  6. Bake in a conventional oven at 180Β°C (350Β°F) for about 1 hour, directly in the mold without a water bath

Tips

  1. The pudding mixture is uncooked when the cake batter is added; do not worry if they mix initially as they will separate during baking to form distinct layers
