Traditional Brazilian Egg White Pudding
Ingredients
- 8 egg whites
- 16 tablespoons granulated sugar
Preparation
Place egg whites in a bowl and beat with a mixer until firm
Gradually add sugar, beating well between each addition
After all sugar is added, continue beating for 5 more minutes
Ensure the meringue is very stiff
Place the meringue into a caramelized mold
Place the mold in a baking dish with a little water
Bake in a water bath at 120 degrees Celsius for about 30 minutes
Check that the top is golden
Remove from oven and let cool until warm
Notes
Do not unmold the pudding when hot to prevent breaking
Unmold when warm but not cold to ensure it releases from the mold
