Vegan Maki Rolls with Avocado and Tofu

Preparation

  1. Cook the brown rice according to package instructions.

  2. Slice the avocado, cucumber, and inari tofu into thin strips.

  3. Lay out a bamboo mat and place a sheet of nori seaweed on it.

  4. Spread the cooked brown rice evenly over the nori, leaving a small border.

  5. Arrange the sliced avocado, cucumber, and inari tofu in a line across the rice.

  6. Roll the nori tightly using the bamboo mat to form maki rolls.

  7. Slice the rolls into bite-sized pieces.

  8. Top the pieces with additional sliced avocado, sriracha mayo, and vegan caviar.
