Vegan Nourishing Bowl with Tofu and Vegetables

Ingredients

  • Brown rice
  • Cooked edamame beans
  • Raw beetroot
  • Cucumber
  • Seaweed
  • Carrots
  • Steamed pak choi
  • Pickled onion
  • Avocado
  • Sesame seeds

Tofu

  • 200g firm tofu
  • Coconut oil for frying
  • 2 tbsp teriyaki sauce

Preparation

  1. Cook brown rice according to package instructions.

  2. Prepare the vegetables as specified: cook edamame beans, slice raw beetroot, cucumber, and carrots, steam pak choi, and use pickled onion and avocado.

  3. Chop the tofu into cubes and fry in a good amount of coconut oil until crispy and golden.

  4. Allow the fried tofu to cool, then toss with teriyaki sauce.

  5. Assemble all ingredients in a bowl, sprinkle with sesame seeds, and serve.
