Vegan Nourishing Bowl with Tofu and Vegetables
Ingredients
- Brown rice
- Cooked edamame beans
- Raw beetroot
- Cucumber
- Seaweed
- Carrots
- Steamed pak choi
- Pickled onion
- Avocado
- Sesame seeds
Tofu
- 200g firm tofu
- Coconut oil for frying
- 2 tbsp teriyaki sauce
Preparation
Cook brown rice according to package instructions.
Prepare the vegetables as specified: cook edamame beans, slice raw beetroot, cucumber, and carrots, steam pak choi, and use pickled onion and avocado.
Chop the tofu into cubes and fry in a good amount of coconut oil until crispy and golden.
Allow the fried tofu to cool, then toss with teriyaki sauce.
Assemble all ingredients in a bowl, sprinkle with sesame seeds, and serve.
