Vegan Hearts of Palm Lobster Roll

Ingredients

  • 1 can of cut hearts of palm
  • 1/2 tbsp creole/old bay seasoning
  • 1 tsp of kelp granules
  • 1/4 cup of crushed seaweed
  • 1 tsp smoked paprika
  • 2 tsps lemon juice
  • 3 tbsps chopped green onions
  • 1 tsp black pepper
  • 1/4 cup of mayo
  • 3-4 dairy-free hot-dog rolls
  • Lettuce or kale

Preparation

  1. Drain and shred the hearts of palm to mimic lobster texture

  2. In a bowl, combine hearts of palm with creole/old bay seasoning, kelp granules, crushed seaweed, smoked paprika, lemon juice, green onions, black pepper, and mayo to create the filling

  3. Mix until well combined and adjust seasoning to taste

  4. Lightly toast the dairy-free hot-dog rolls if desired

  5. Line the rolls with lettuce or kale

  6. Stuff the rolls with the prepared filling and serve immediately
