Mango Edamame Salad
Ingredients
- 1/2 mango, cubed
- 1 red bell pepper diced
- 1/2 cup edamame
- 1/2 cup fire roasted corn
- 3-4 brussel sprouts, shredded or thinly sliced
- Handful of cilantro, diced
- 1/4 tsp garlic powder
- 1/4 tsp ginger powder
- 1/4 tsp smoked paprika
- 1/2 tsp dried basil
- 1/2 juice of one lemon
- 1 tsp maple syrup (optional)
- Salt to taste
Preparation
Combine all ingredients in a bowl and stir to combine evenly
Allow mixture to sit in the fridge for at least 10-15 minutes to allow flavors to infuse
Feel free to replace veggies with the ones you specifically have on hand as needed
