Mango Edamame Salad

Ingredients

  • 1/2 mango, cubed
  • 1 red bell pepper diced
  • 1/2 cup edamame
  • 1/2 cup fire roasted corn
  • 3-4 brussel sprouts, shredded or thinly sliced
  • Handful of cilantro, diced
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • 1/4 tsp smoked paprika
  • 1/2 tsp dried basil
  • 1/2 juice of one lemon
  • 1 tsp maple syrup (optional)
  • Salt to taste

Preparation

  1. Combine all ingredients in a bowl and stir to combine evenly

  2. Allow mixture to sit in the fridge for at least 10-15 minutes to allow flavors to infuse

  3. Feel free to replace veggies with the ones you specifically have on hand as needed
