Massaged Kale Salad with Chickpeas and Quinoa

Ingredients

  • 1 bunch curly kale, rinsed and de-stemmed
  • 2 tbsp tahini
  • Juice of one lemon
  • Zest of one lemon
  • 1 can chickpeas, rinsed and drained
  • 1 cup cooked quinoa
  • 2 medium carrots, diced
  • 1 tbsp capers, minced
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Preparation

  1. In a medium bowl, add kale, tahini, lemon juice, lemon zest, seasonings and a pinch of salt over top the greens.

  2. With your hands massage kale, kneading the mixture into your greens until kale softens and turns a brilliant green color.

  3. Once kale is shrunken down, add remaining ingredients and combine until fully incorporated.

  4. Taste and adjust seasonings based on your preference.
