Massaged Kale Salad with Chickpeas and Quinoa
Ingredients
- 1 bunch curly kale, rinsed and de-stemmed
- 2 tbsp tahini
- Juice of one lemon
- Zest of one lemon
- 1 can chickpeas, rinsed and drained
- 1 cup cooked quinoa
- 2 medium carrots, diced
- 1 tbsp capers, minced
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Preparation
In a medium bowl, add kale, tahini, lemon juice, lemon zest, seasonings and a pinch of salt over top the greens.
With your hands massage kale, kneading the mixture into your greens until kale softens and turns a brilliant green color.
Once kale is shrunken down, add remaining ingredients and combine until fully incorporated.
Taste and adjust seasonings based on your preference.
