Gluten-Free Vegan Breakfast Sandwich

Ingredients

  • Bagel of choice
  • 1/4 avocado
  • Sprinkle of everything bagel seasoning
  • 3 slices of tomato
  • 1 serving egg substitute of choice
  • Handful of microgreens
  • 1-2 tablespoons almond milk ricotta
  • Hot sauce (optional)

Preparation

  1. Toast the bagel.

  2. Slice the avocado and tomato.

  3. Prepare the egg substitute according to package instructions.

  4. Spread almond milk ricotta on the toasted bagel.

  5. Layer with sliced avocado, tomato slices, egg substitute, and microgreens.

  6. Sprinkle with everything bagel seasoning and add hot sauce if desired.
